Squashy Pudding

So my kids won’t eat squash, but they will devour the baby food pouches that have squash in it.  I decided to make my own pureed squash and fruit and they went nuts for it!  I also like it and thought that the consistency was kind of like pudding, so Squashy Pudding was born. They love it so much that I oftentimes will save it for “dessert.”

2 cups roasted butternut squash
1/2 cup water
1 cup applesauce or cooked pears

To cook the pears: I peel them and cut them up into little chunks.  I cook it in a saucepan with a little bit of water.  Once they have softened, then they can go into the pudding after being cooled.  Sometimes I like to add cinnamon to the pears for extra flavor.  You might not like eating over-ripe pears, but in the pudding it is perfect.

If you do not have time for the pears, applesauce is a great alternative.

1. Let the squash cool.  Then measure 2 cups into the food processor.

2. Add the fruit

3.  Add the water.  May want to add some more or less, depending on the consistency you like.

4. Puree

5. Devour!  🙂
